Hi friends! I hope this summer has been going swimmingly for you. We have a few weeks left to enjoy (or curse) heat. In these dog days, frozen treats are pretty irresistible. They are usually pretty sugar-packed, too. But these frozen fruit pops can assuage your guilt because not only do they have a delicious mango flavor, they also get a boost from heavy metal chelators, parsley and cilantro. And there’s some cucumber and gelatin in there for added nutrition, protein, and gut healing properties, too! The mango adds a punch of vitamins C and A, immune system powerhouses.
For these popsicles, I did bust out the juicer AND the blender. You could try blending all the ingredients together, but the results will be much thicker, and possibly flecked with fiber and pulp that may deter the kids. And it’s definitely my son, I had in mind when formulating these treats! It may work in a Vitamix or other work horse of a blender.
Here’s what I juiced:
- 1/2 large English cucumber
- 1 handful of parsley
- 1 handful of cilantro
- 1 nectarine or peach
I actually collected the pulp, and juiced it again to make sure I got everything out of it I could. It resulted in 1 cup of intense green goodness.
Then, I added this juice to my blender with:
- 2 mangos
- 1 banana
- 1 cup water (or enough to result in a total volume of 48 oz)
- 1 TBSP grass-fed gelatin*
*After blending the first 4 ingredients, I quickly blended gelatin into the mix. I don’t like to over-blend gelatin, as it can transform the consistency pretty quickly. So I make sure everything else is well blended first, before adding that to the mix.
This mixture makes enough to fill 12 4 oz popsicle molds. If you don’t want or can’t make that many at once, I like to use any extra to make mango pudding. Simply pour the remainder into a bowl with a few TBSP of chia seeds, and refrigerate. The next day you will have a delicious and thick bowl of nutritious, delicious mango “gel” that could also be dehydrated into fruit leather as well! This mango mixture is packed with vitamins and minerals and more. It is a staple you’ll want to keep around the whole year! Make sure to keep some frozen mango on hand to get your fix later in the year!
